Known for its rich and creamy golden roe, Chef Ng brings out the best flavours of Hairy Crabs through Jiang Su and Zhe Jiang style of cooking. Here, we present a sneak preview of what you can expect in the Hairy Crab menu at Shang Palace!
1) Braised Bird’s Nest, Hairy Crab Meat and Roe
Start your meal with a hearty bowl of delectable bird’s nest with generous toppings of crab meat and roe!
[caption id="attachment_16688" align="aligncenter" width="1024"] Credit: Rachel Lim[/caption]Chef Ng shreds the crab meat and mixes it with the roe, so you can enjoy crab meat without getting your hands dirty. We polished this off in no time!
2) Braised Tofu, Meatball, Hairy Crab Meat and Roe
This dish may not look the most appetising, but it tasted like heaven.
[caption id="attachment_16817" align="aligncenter" width="2448"] Credit: Rachel Lim[/caption]Tofu was cut into tiny cubes and mixed with minced meat. It was all drenched in crab meat and roe sauce. Scoop up that sauce and bite into the crispy tofu and meat at the same time, for a party in your mouth!
3) Pan-Fried Hairy Crab Meat Stuffed Shell with Shrimp Paste and Pork
Shreds of crab meat and minced pork were mixed with shrimp paste, and stuffed into a crab shell.
[caption id="attachment_16820" align="aligncenter" width="2448"] Credit : Rachel Lim[/caption]Oozing with flavours of seafood goodness, chewy, and juicy, this was no doubt, our favourite dish!
4) Crispy Noodles with Sea Caracol, Hairy Crab Meat and Roe
Crispy noodle is doused with crab meat and roe sauce for this dish.
[caption id="attachment_16821" align="aligncenter" width="2398"] Credit : Rachel Lim[/caption]Paired with Sea Caracol, this dish was the ultimate representation of the taste of the ocean.
Enjoy the crunch of the crispy noodles, the chewy sea caracol, and the savoury fragrance of crab meat and roe in this one sumptuous dish!
Take a bite now!
Chef Ng has shown that crab meat and roe just about goes with everything! These dishes are not all, specialties like Steamed Hairy Crab with Ginger Tea and Deep-fried Cod Fish with Yuzu Honey Glaze are also available.

COMILONA Presents Argentinian Flavours: Grilled Meat, Pumpkin For Dessert, & More!
Going to Argentina from Singapore is a long 30 hour flight. If you don’t have the time to visit the beautiful land, fret not! BoCHINche, an Argentinean restaurant in Singapore, brings the flavours of Argentina to you in a festival, COMILONA 2016.
For three nights only from 26 October to 28 October, tantalise your taste buds with flavours created by famous Argentinean chefs.
[caption id="attachment_17134" align="aligncenter" width="2141"] Caption: Chef Soledad Nardelli and Chef Martin Molteni (from Left to Right) Credit: Rachel Lim[/caption]Argentinian Flavours
As Argentinian flavours are quite different from our local dishes, we were invited to a cooking demonstration where chefs explain and showcase the produce and culture of Argentinian cuisine.
Here’s what we had:
Humita
First up, Humita, a creamy corn dish, with similar textures to mash potatoes.
[caption id="attachment_17128" align="aligncenter" width="1759"] Credit: Rachel Lim[/caption]Cooked with onion, tomatoes and herbs, there was a perfect balance of sweet and savoury. This was surprising, as we’ve never tasted anything like this before – corn-based dish that was both sweet and salty at the same time!
Zapallo en almibar
From the Cuyo region, Zapallo en almibar is a dish where pumpkin is cooked till firm in water, then transferred and simmered in sugar syrup.
[caption id="attachment_17129" align="aligncenter" width="2448"] Credit: Rachel Lim[/caption]This dish is frequently eaten as a dessert. It’s mind-blowing for us Singaporeans, because we’re used to eating pumpkin as a vegetable, not as a sweet treat!
Chipa
Next, Chipa was served. It is a popular traditional Argentinean bread found in the north east regions of the country.
[caption id="attachment_17130" align="aligncenter" width="2284"] Caption: Chef Martin Molteni with a bowl of ChipaCredit: Rachel Lim[/caption]
The popular use of tapioca flour and cheese gave the Chipa its chewy texture. Then, the bread is baked, resulting in a crispy outside, and soft inside. What a great snack for any occasion!
Chimichurri
Another crowd favourite is the classic Chimichurri, an Argentinean meat sauce that is used to marinate meat before it is barbecued.
[caption id="attachment_17132" align="aligncenter" width="2362"] Credit: Rachel Lim[/caption]In Argentina, meat is a staple on every dinner table. Hence, the Chimichurri recipe has undergone generations of revisions. It’s like Sambal chilli to us.
A medium rare grilled steak was topped with Chimichurri. To no one’s surprise, the flavours of both the sauce and the beef complemented each other perfectly.

The Rice Table: Sedap Indonesian Food In The Heart Of Orchard Road!
Stashed away on the 2nd floor of International Building along Orchard Road, The Rice Table has been a welcomed mainstay in the area.
It serves up gastronomical dishes created from age-old recipes that evoke the warm taste of home-cooked food and Indonesian hospitality.
You will be instantly drawn in by The Rice Table’s earthly interior tones, wooden panels, tribal motifs, and woven lampshades when you walk into this cosy eatery. They emanate a rustic charm.
At the table, the first thing that draws your attention is the long plate warmer, which is an ingenious way of keeping your little dishes warm and enjoyable for a longer time.
The food
While there are quite a number of restaurants serving specialty Indonesian fare, The Rice Table claims to be the only authentic rijsttafel restaurant, where dishes are laid out in small, sampling portions in the form of a rice table for a feast of the senses.
Taste a plethora of classic Indonesian delicacies without breaking a sweat. And yes, The Rice Table is a Halal restaurant!
From the classic curry chicken to the surprisingly tasty fried sweet and sour fish, a variety of 20 delectable dishes are on offer at The Rice Table’s dinner all-you-can-eat buffet (15 items for lunch!).
[caption id="attachment_15032" align="alignnone" width="2000"] Credit: The Rice Table[/caption]Tahu Telor, the perfect match of fried tofu cubes and omelette, done to perfection. Soft on the inside and crispy on the outside, and topped with The Rice Table’s in-house signature sauce.
The Sate Ayam (grilled chicken satay) is marinated with a secret family recipe. The meat is juicy and oh-so-flavourful. A definite must-try.
[caption id="attachment_15031" align="alignnone" width="2000"] Credit: The Rice Table[/caption]Their umami Ayam Panggang (grilled chicken) is also robust in flavour and very tender. Make sure you savour every spoonful of the traditional Indonesian sweet soya sauce it comes with.
Details
Drinks and desserts are not included in The Rice Table’s menu. If you still have room for some sweet treats, you absolutely have to give their Durian Chendol a shot.
With generous toppings of red beans, pandan jelly and a thick coat of Gula Melaka goodness atop a finely-shaved bed of durian-pureed ice, there is no better way to conclude your satisfying Indonesian dining experience.
There has to be a reason why The Rice Table has rolled with the punches and survived the ever-changing landscape of Singapore’s restaurant scene. Time to make a reservation for the weekends, head down and find out for yourself!

The Tippling Club: Where You’ll Not Only Sip Cocktails, But Also Smell Them!
With the introduction of new head bartender, Joe Schofield, Tippling Club has revamped their cocktail menu. Their new menu, titled Sensorium, seeks to unify aromas with spirits to invoke memories and emotions of our experiences.
“80 per cent of the flavours we taste come from our sense of smell”
It’s with this idea that the new menu was conceptualised. We’ll now not only sip cocktails, but also smell them! Sounds awesome, no?
Widely regarded as an innovative and forward thinking bar, the Tippling Club’s new menu has proven once again, that they’re ahead of the game.
The birth of the Sensorium Menu
The new menu places the emphasis on the aromatic rather than alcoholic.
“Nothing stirs up cherished childhood memories like the smell of red crayons”
The idea was that customers should choose their preferred cocktails based on an aroma that interests them. It’s about your personality, your chosen smell, more than the choice of alcohol.
The process
We were honoured to have been given the opportunity to attend a tasting session.
First, they presented the whole menu through a bouquet of perfumed blotters.
Scofield encouraged us to smell each one and to pick out our favorite scents. This was in line with their philosophy of placing precedence on smell.
And god, did they smell amazing.
He even stated at one point that he would be happy to see customers ‘stealing’ the blotters to keep for memories sake.
After showing us the scents and cocktails, it was time to taste them.
‘Potentially, we could be the first bar in Singapore to marry aromatic fragrance to our cocktails to such an extent. Perhaps even globally.’ Chef-Owner Ryan Clift
Well, we don’t doubt him. The cocktails did not disappoint.
Cocktail – Rain
Have you ever actually thought about how rain smells like?
Somehow, Tippling Club has managed to accurately capture the scents that immediately invoked my memories of rainfall upon the first whiff.
Rain is a eclectic mix of citrus, soda and vodka, served with an edible stone.
Don’t worry, the stone, unlike its namesake, is actually cushiony. The initial bite is chalky, but it soon melts in your mouth for that earthy aftertaste, just like how I feel rain would taste like.
The drink itself is light and refreshing. The flavours and the alcohol were delicately balanced.
The Negroni
They say you can’t beat a classic.
Well, we think that Tippling Club has just made the classic even better! Negroni doesn’t just taste good – it smells just as delish!
Essentially still equal parts gin, sweet vermouth and campari, Tippling Club used ultrasonic sound waves to emulate a barrel-aged flavour. The traditional orange garnish is actually a negroni-flavoured gelatine mix!
Refreshing, punchy, and uplifting. We’d love to go for seconds.
The Campfire
Do you reminisce your adventurous days spent outdoors by the campfire?
This cocktail will help you relive those memories.
This is an incredible melody of marshmallow milk, burnt syrup, ash and gin, served together with a slightly roasted marshmallow.
How does it smell? Smoky, and absolutely delectable. We never thought we could describe a smell as delicious, until now.
The Caramel
The caramel was a clear favourite both in terms of sight and smell.
The aroma was pleasantly tart, elevating the rich, saccharine flavour of caramel with just a hint of citrus and rum.
The drink itself proved to be well balanced and not overly sweet, served along with a salted caramel lollipop made in house.
No better treat than this.
Details
The cocktails on the Sensorium menu go for 22SGD a pop, which was a pleasant surprise. With such detailed thought and meticulous care put into the menu and cocktails, we fully expected them to go for more conventional premium prices.
Alas, we forgot that Tippling Club does not do conventional, they’re that special round peg in a square hole. Furthermore, it only goes to show that the priorities of Tippling Club are to delight their customers.

Eyescream And Friends: Shaved Ice GELATO That’s Super Cute, All Natural, And More!
When you’re sizzling in the Land of a Thousand Suns, you can’t help but crave for something cold… some shaved ice perhaps? Or, gelato would really hit the spot too. It sure is a tough decision when both seem equally yummy… Well guess what, now you can have both! That’s a food fantasy come true, as Eyescream and Friends has hit Singapore’s shores.
The mastermind of this refreshingly ingenious concoction, Mr Joad Lopez, took inspiration from shaved ice he ate at a Taiwanese night market.
Back in Barcelona where gelato was aplenty, he decided to matchmake the two. And that, was how Eyescream and Friends was born.
Eyescream And Friends – Compass One
As its name suggests, Eyescream and Friends represents the 7 basic flavours – a quirky medley of characters with distinct personalities and names to boot.
[caption id="attachment_16768" align="alignnone" width="1028"] The toppings never end.[/caption]Woah, too many toppings, too little time! What a torture to have to choose, can’t we have all of them?
Here are some of the toppings – caramelized cookies, gummy bears, banana nut crunch, forest berries sauce, white chocolate sauce, and marshmallows.
Eyescream and Friends has just released its kiwi, watermelon and rockmelon toppings as well as a lovely salted caramel sauce.
As of now, there are 8 different flavours and a whopping 15 different toppings to please your palate as you mix-and-match.
This guarantees that you’ll experience the dessert in novel ways each time, as you play with endless new flavour combinations.
Oreo Yoghurt Flavour Complete Pack ($6.90)
The Complete Pack ($6.90) which we got, comes with a cup of shaved gelato and 2 toppings. The packaging is really cool, as it’s designed to hold a cup of gelato and 2 fun-size cups of toppings, so that you can stroll around the mall while you eat!
The tray even has a spot at the side to clip a piece of tissue or two. This way, your hands are free to tackle your yummy target.
[caption id="attachment_16769" align="alignnone" width="4320"] Those eyes! He’s really camera-shy, being a newbie.[/caption]The Oreo flavour was strong but not overpowering, and accurately encapsulated the taste of the crisp tidbit. No hint of stale biscuit there, we are talking Oreos fresh out of the packet.
We were surprised by how the shaved gelato managed to be creamy, yet not cloying. The icy texture of the gelato, which was smooth and slushy-like, prevented the Oreo flavour from coming across as too dense.
Add to that the tartness of the yoghurt flavour, which shook up the whole treat. Who would have thought that Oreo and yoghurt go this well together?
Wild Berry Complete Pack ($6.90)
If you could capture the joys of childhood in one flavour, this would be it. The wild berry shaved gelato tasted really fun and mischievous, like a mix of grape-flavoured Hi-Chew, Kyoto grape, and strawberry bubble gum.
The fact that it had just the right kick of sourness lent it a really refreshing touch, without going overboard.
It’s the perfect pick-me-up in the mornings, an invigorating treat in hot afternoons, and a perfectly spunky dessert to round off the night.
Chocolate shaved gelato ($4.90, without toppings)
Despite being a really common flavour, this chocolate shaved gelato is curiously different from the norm. It comes with a touch of je ne sais quoi that is hard to place.
While tasting similar to a hazel-nutty Ferrero Rocher, it has the added depth of the dark concentrated cocoa powder gathered at the bottom of a hot chocolate drink.
Cheesecake shaved gelato ($4.90, without toppings)
This was virtually a cheesecake blended into a slushy. However, with the pronounced taste of natural yoghurt, it’s a lighter, more refreshing version of your regular cheesecake.
For an interesting and yummy combination, try the cheesecake-flavoured shaved gelato topped with forest berries sauce or strawberry sauce. We did just that, and couldn’t have been more pleased with the results!
The creaminess of the cheesecake flavour complemented the fruity tartness of the berry sauce, which was tangy and ripe with flavour.
How Eyescream’s Shaved Gelato is Made
We managed to capture how these little, tasty wide-eyed creatures are created!
[video width="640" height="360" mp4="https://discoversg.com/wp-content/uploads/2016/10/medium1.mp4"][/video]First, a cylindrical block of ice maintained at an optimum temperature (for the right balance between creamy and icy), is loaded into an ice-shaving machine.
This contraption, which is flown in from Barcelona, then carves delicate layers of shaved gelato into a bowl.
Gelato shakes and lollipops
Apart from shaved gelato, Eyescream and Friends truly lives up to its philosophy of creating smiles, by offering gelato shakes ($5.90) as well as handmade lollipops ($4.90).
[caption id="attachment_16780" align="alignnone" width="720"] Eyescream and friends Facebook[/caption]Among the lollipops, mango and apple are the most popular flavours. They’re all extremely fresh, as Eyescream and Friends flies them in from Barcelona regularly.
