Want To Try Bak Chor Mee Pasta? Timbre Brings Signature Dishes Of Local Home Chefs To Their Outlets

Private home dining is all the rage these days. It’s not difficult to understand why as the modern consumers can be tired of ‘outside’ food and would prefer a ‘simple’ home style cooking.

As the saying goes, the best food is the kind that’s cooked at home. We all love the comfort of a good home-cooked meal but the idea of stepping into a stranger’s home for dinner might sound a little crazy to some.

However, having attended a private home dining experience, I can ascertain that it is an experience like no other. Some menus may cost anywhere between $80 – $100, some with unique creations and a long waiting list you have to book months prior.

Even though the price-tag seems high, a lot of Singaporeans are willing to fork out good money as many of these concepts offer recipes that which are not commonly found anymore.

Timbre Meets Home Chefs

If you’ve never attended a private home dining session but curious as to what they have to offer, Timbre Group is collaborating with three renowned local home-chefs for the launch of Timbre X.

The first collaboration at Timbre X venues sees three renowned home-chefs, Alvin See (@chefandsommelier), Shen Tan (@ownselfmakechef) and Serene Yeo (@serenesupperclub) putting their signature dishes on Timbre’s menu. Each chef has also picked out 2 – 3 signature dishes from their menu and generously shared their treasured recipes with Timbre’s culinary team for execution.

[caption id="attachment_38258" align="aligncenter" width="1600"] Image Credit: Timbre[/caption]

The dishes are available at Timbre X @ The Arts House, Timbre X @ The Substation, Timbre X @ Gillman and Switch by Timbre X from 24 October 2018 to 23 January 2019.

Here’s a look as to what each chef has to offer:

1. Shen Tan (@ownselfmakechef)

When was the last time you had Chef Shen Tan’s food?

Perhaps it was at Revolution Coffee, where her signature nasi lemak is served for under $10 or her first restaurant, Wok & Barrel on Duxton Hill? Well, if you’re a fan on her take of modern Singaporean cuisine, the latest place she has been unleashing her creativity is at her new private kitchen called Ownself Make Chef.

Housed in in a three-room HDB flat in Commonwealth, the living room and dining room seats up to twelve and can also function as a show kitchen for cooking demos.

Serving up her Signature Nasi Lemak, the famous dish is painstakingly cooked by steaming the rice twice over four hours. The resulting aromatic rice is fluffy with a flavour packed lemak taste. Complemented with her smokey coffee sambal, crispy fried chicken, omelette and crispy white bait, this is one dish you HAVE to try at Timbre X.

Reminiscent of local favourite bak chor mee (also Chef Shen’s favourite local dish), her Bak Chor Mee Pasta features al dente fettuccini tossed through a tart piquant sauce of chilli, lard and fish sauce. The tender juicy slices of pork shoulder ARE marinated in 5-spice powder, coffee grounds, sugar and herbs, elevating this humble hawker dish.

2. Alvin See (@chefandsommelier)

Alvin See is a passionate home cook who whips up dinner for his family almost “every weekend”. In 2010, started a popular blog called

The Roast Pork Belly is definitely a show stopper. This is a tested and proven recipe which he has been using for years and on countless gathering occasions. It has never failed to impress the guests. You can expect a layer of crispy airy crackling atop and juicy, warm and tender meat.

His Dukkah Coated Lamb Chops with Mango Salsa and Roasted Mustard Garlic Potato is another dish you can’t miss. The coat of dukkah spice mix elevated the juicy lamb chops, giving it a robust flavour with a stunning rustic crust while the minty and refreshing mango salsa provides a great balance.

For those who love their steak, the Peppercorn Steak with Creamy Brandy Sauce features a 400g Black Angus Ribeye steak crusted with white peppercorn which rests on a bed of creamy brandy sauce.

3. Serene Yeo (@serenesupperclub)

Inspired by her time living in London and volunteering at Italian-Japanese-Brazilian chef Luiz Hara’s Nikkei supper clubs, Serene shares with guests the origins of Nikkei cuisine and explains each course as it is made from her open-concept kitchen.

One would not know that Japanese and South American flavours form an incredibly delicious partnership had it not been for Serene Yeo who is passionate about it. A marketing manager by
day and Nikkei home cook by night, she runs a Nikkei supper club which serves up Japanese home-cooking with a South American twist.

The Sea Bass Rice With Yuzu And Green Jalepeno is definitely a unique creation. The dressing of olive oil, yuzu juice and green jalapeño chillies, mixed into the rice just before serving gives a kick you’ll love.

Another delicacy offered by Nikkei families at street markets are Pastéis. These pastéis includes a generous filling of chicken, cream cheese and green olives wrapped in gyoza skin and deep-fried to crispy golden perfection.

In a queue to try out private home dining by these 3 chefs? You can now try their signature dishes at the newly rebranded Timbre X venues!

Just like it’s decor, all their desserts are floral-themed as well. From Rose Apple Pies ($5.90) to Muesli Tarts ($5.90), Wild Blooms boasts a wide array of IG-worthy desserts that you would not want to miss out on.

Fine Dining On A Budget: S’pore Steakhouse ‘Fat Belly’ Serves 6-Course Meal With Wagyu Steak For Just $78

Despite the fact that my job pretty much revolves around food, I’ve never been one for fine dining — I’ve never been able to justify the price-to-portion ratio in my head (“$100 for a single scallop!?”), and the closest I’ve gotten to it is watching Gordon Ramsay cooking on YouTube.

[caption id="attachment_37496" align="alignnone" width="1440"]FatBelly Image Credit: Fat Belly[/caption]

It would seem then, that Fat Belly’s Alternative Steak Experience is the perfect middle ground for someone like me — for $78, this “speakeasy steakhouse” in the Botanic Gardens area is offering a six-course meal centered around their alternative wagyu steak cuts.

With an open mind and open-er stomach, I headed down to try it out.

Raising The Steaks

Before we get into the food, something needs to be said about the ambience.

[caption id="attachment_37494" align="alignnone" width="4032"] Image Credit: Discover SG[/caption]

The entirety of Fat Belly is comprised of a cozy bar counter that sits 10 (it shares a space with its sister restaurant, Sugarhaus), and an open kitchen concept allows you to watch the chef prepare your meal as the fragrant smells act as a mouth-watering precursor for what’s to come.

The close proximity of everything makes for an rather intimate experience, making it a great place if you’re running out of date night ideas.

[caption id="attachment_37490" align="alignnone" width="3925"]FatBelly Image Credit: Discover SG[/caption]

You know you’re in for a good time when your appetisers have appetisers, or a “pre-dinner snack”, as the chef called it. This part of the meal varies from day to day, and I was served Homemade Rice Crackers — sprinkled with beef salt and furikake, this light starter definitely got me in the mood for food.

[caption id="attachment_37486" align="alignnone" width="3174"] Image Credit: Discover SG[/caption]

The meal then began in earnest with the Foi Gras Creme brûlée. The ignorant foodie in me expected the dish to be sweet, but it gave off a truffle-like taste instead (alternative experience, indeed). Fans of savoury food will enjoy this, but it does lean on the stronger side and might be a little too overwhelming for some.

[caption id="attachment_37495" align="alignnone" width="3187"] Image Credit: Discover SG[/caption]

The saltiness of the previous two dishes had me craving for meat, and it just so happened that the next appetiser consisted of a Skewered Wagyu Beef Intercostal (that’s the space between the ribs, for those of you who didn’t know). Cooking the meat in red wine gave it an alcoholic aftertaste, and the addition of chimichurri sauce added another fresh dimension to the already-flavourful dish.

[caption id="attachment_37485" align="alignnone" width="2939"] Image Credit: Discover SG[/caption]

Next up was the Tajima Beef Char Siew, which I can only describe as “char siew on steroids”. Draped in a house sauce consisting of honey and fermented red beancurd, the distinct char siew taste was especially strong, and when paired with the accompanying kale made for a balanced and satisfying bite.

[caption id="attachment_37488" align="alignnone" width="3110"] Image Credit: Discover SG[/caption]

You’d think that three appetisers would be enough, but the chef had one more up trick up his sleeve in the form of a Wagyu Slider (not that I was complaining). Sandwiched between homemade potato buns and melted Gouda cheese, the mini burger gave off a buttery umami flavour, and was the perfect end to the string of appetisers.

[caption id="attachment_37489" align="alignnone" width="3364"] Image Credit: Discover SG[/caption] [caption id="attachment_37491" align="alignnone" width="3688"] Image Credit: Discover SG[/caption]

Finally, it was time for the main event — the Marble Score 8 Grilled Tajima Tri-Tip, and a USDA 150 day Grain Fed Angus Flat Iron Steak from the a la carte menu as well. Eating the two side by side really exemplified how different cuts can provide wildly different experiences — the flat iron was so tender that it pretty much melted in my mouth, while the Tajima tri-tip was probably the most flavourful steak I had ever eaten in my life. There’s no wrong choice here.

[caption id="attachment_37493" align="alignnone" width="3564"] Image Credit: Discover SG[/caption]

And what better way to end a meal than with some dessert? The Molten Lava Chocolate Cake was extremely rich, and the addition of raspberry helped to mix things up as well. The cinnamon gelato from Sugarhaus that’s served alongside it warrants a writeup of its own, but that’s an article for another day.

I was always under the impression that fine dining wouldn’t fill my stomach, but I was surprisingly full at the end of the meal (I suppose six courses will do that to you). From sweet to savoury to every thing else in between, pretty much every taste receptor had been satisfied.

[caption id="attachment_37487" align="alignnone" width="3745"] Image Credit: Discover SG[/caption]

And even if you aren’t up for such an extravagant meal, their surprisingly affordable a la carte menu is worth checking out as well — the aforementioned Flat Iron Steak goes for a very reasonable $22, and sides like Truffle Fries and Sauteed Thyme Mushroom cost a mere $5.

Fat Belly’s Alternative Steak Experience strikes the perfect balance between fine dining and…well, normal dining, and proves that you don’t have to break the bank for a premium culinary experience (relatively speaking, at least).

If you’re ever in the mood to treat yo self, Fat Belly is definitely one place to consider.

15 Best Stalls To Visit At Twilight: Flea & Feast – Indoor Bazaar With All-S’porean Food, Clothes And Crafts

Did you hear? The highly anticipated Twilight: Flea and Feast is back again for it’s third edition! If you missed out on #TWILIGHT18 earlier on in February, don’t fret. From 3 – 5 August, make your way down to the Suntec Convention & Exhibition Centre for a day of browsing through dozens of flea stalls, free movie screenings and of course, sinking your teeth in tasty eats!

This indoor bazaar houses over 100 stalls selling popular street food, clothes, accessories and handmade crafts. This time round, you guys are in for a real treat as you’ll find more than 50 F&B vendors – you probably won’t know where to start!

For the first time since its inception, all vendors showcased at the event will be local. Which is why this year’s edition of TWILIGHT will be themed “Proudly Local” so both vendors and visitors get to celebrate everything we love and remember about Singapore.

To help you out with your upcoming shopping and gastronomic adventure, we’ve listed out some of our favourite makan and shopping vendors that you HAVE to visit!

What To Makan

1. Saiko

Think of Saiko as the elevated version of your typical pasar malam takoyaki joint!

Serving up Japanese street food realness, Saiko serves takoyaki in sizeable portions with full bite-sized fillings. You can choose from 3 different fillings – octopus, chicken and braised mushrooms. You also have the option of mixing 2 different fillings in one serving.

[caption id="attachment_36276" align="aligncenter" width="3807"]Twilight Flea & Feast Image Credit: Discover SG[/caption]

Other selections include Classic, Dashi (takoyaki with dashi broth, bonito flakes and scallions) and Miso (takoyaki with miso butter and rice krispies). Top it all off with a perfectly cooked onsen egg for just an additional $2!

We promise you that the takoyaki from Saiko won’t disappoint!

2. Burgernomics

Burgernomics got everyone raving over them when they first opened at Pasir Ris Central Hawker Centre. They aim to differentiate themselves by keeping their burgers honest and simple, but with a distinctive Asian twist.

[caption id="attachment_36277" align="aligncenter" width="1240"]twilight flea & feast Image Credit: @burgernomics_sg[/caption]

This time round, you get to satisfy your burger cravings without having to travel all the way down to Pasir Ris!

We heard that their burgers are really popular at events so head down early to avoid the long queues.

3. Inariku

If you eat, sleep and breathe all things Japanese, then you’re going to love this one.

Trained at the Tokyo Sushi Academy to fortify her passion for Japanese cooking, you can expect her highly raved lobster inari which comes in small sets of 4, ramen, unagi bento and more!

[caption id="attachment_36278" align="aligncenter" width="1680"]twilight flea & feast Image Credit: @ria897[/caption]

We recommend getting her lobster inari which is a combination of lobster and squid salad which sits atop a bed of sushi rice. All these premium ingredients are nestled within some Inariage aka Aburaage (the sweet beancurd pouch) and finished off with some Japanese mayonnaise.

4. O’Braim

O’Braim entered the pasar malam circuit around 2016 selling goreng pisang (banana fritters) with a modern twist.

They sell banana fritters in different flavours, including chocolate and cheese with condensed milk, while using a goreng pisang recipe passed down from their grandmother.

[caption id="attachment_36279" align="aligncenter" width="1254"]twilight flea & feast Image Credit: @redroselips[/caption]

You’ll always find long queues at their stall which also means “confirm plus chop good”.

5. Ikan1986

A must have at every BBQ, their freshly grilled otah is one of the best we’ve had at any pop-up events!

Based on a traditional family recipe dating back to 1986, their staple menu item has fed scores of people ever since.

[caption id="attachment_36280" align="aligncenter" width="1886"]twilight flea & feast Image Credit: @ikan1986[/caption]

Made with fresh mackerel and a select number of equally fresh herbs and spices, their freshly grilled otah remains a delightful way to please the palate and tummy; either as an afternoon snack or part of a meal.

6. Egg Stop

Opening early August 2018 at Paya Lebar Square, you’ll get to try their sandwiches first at Twilight Flea & Feast.

Although we don’t know much about them yet, their sandwiches look like the perfect mid-afternoon snack.

[caption id="attachment_36281" align="aligncenter" width="1256"]twilight flea & feast Image Credit: @eggstopsg[/caption]

Just look at all that filling spilling out of their sandwich. We don’t know about you, but we’re definitely excited to try this one out!

7. Katoshka

Katoshka needs no introduction from us. They’re seen at almost every bazaar/pop-up events that they’re pretty much a household name by now.

They go by a very simple concept: good ol’ fries served in cups laden in different sauces, from special cheese, sour ranch, chilli beef and sambal cheese.

[caption id="attachment_36282" align="aligncenter" width="1254"]twilight flea & feast Image Credit: @thekatoshka[/caption]

If you love their fries as much as we do, then go get yourself a cup (or two) at Twilight!

8. Naughty Boyz

Known for their spicy mac and cheese, this is the perfect meal for sharing.

[caption id="attachment_36283" align="aligncenter" width="1786"]twilight flea & feast Image Credit: @naughtyboyz_[/caption]

Their mac and cheese is bound to be a gooey delight. I mean, who doesn’t like cheese?

9. BOO:EH

BOO:EH serves up inspired butterbeer like the ones you see in Harry Potter World. This homemade brew consists of 2 parts – soothing liquid gold and dreamy butterscotch foam.

[caption id="attachment_36284" align="aligncenter" width="1032"]twilight flea & feast Image Credit: @boo.eh[/caption]

The flavour is so rejuvenating and unique that it transports you to a magical world at the first sip.

P.S Cafe Launches Jypsy – New Japanese Dining Concept Featuring Sushi, Sashimi, And Unagi Fried Rice

jypsy

P.S Cafe has long been a prime brunch spot for Singaporeans.

With various dining concepts, each housed in a beautifully decorated interior, there’s something for everybody when it comes to dining at P.S Cafe.

Recently, P.S Cafe launched a new concept, Jypsy.

Japanese Cuisine By P.S Cafe

Located at 38A Martin Road, this new concept by P.S Cafe is a casual and vibrant restaurant that’s stunning yet not intimidating.

Because sometimes if a place is too atas, I’m not stepping in.

[caption id="attachment_35868" align="aligncenter" width="1080"]jypsy Image Credit: @gwky[/caption] [caption id="attachment_35869" align="aligncenter" width="2048"]jypsy Image Credit: Jypsy[/caption]

Now unlike the other P.S Cafes, this one serves contemporary Japanese cuisine.

On their rather extensive menu, you’ll find grilled skewers, fresh sashimi, sushi rolls, cold and hot plates, as well as rice and noodle bowls.

For mains, try the Unagi Fried Rice, which comes with grilled unagi, tofu, pickles, omelette, and slaw.

[caption id="attachment_35864" align="aligncenter" width="1080"]jypsy Image Credit: @stephangry[/caption]

Don’t miss out on the Tonkatsu Curry Rice, which has breaded Iberico pork cutlet, Japanese curry, a pile of shredded cabbage, and grilled shishito peppers.

[caption id="attachment_35865" align="aligncenter" width="1080"]jypsy Image Credit: @pscafe[/caption]

Some of the items on the menu can also be tweaked for vegetarians, like the Smokey Nasu sushi roll – robata Japanese eggplant, roasted peppers, tofu, miso aioli, and pickled radish.

[caption id="attachment_35866" align="aligncenter" width="1080"]jypsy Image Credit: @journeyundefined[/caption]

If you’re looking for sides, be sure to get the Nest of Fries, crispy shredded potato is drizzled with white truffle oil, wasabi mayo, and teriyaki balsamic sauce to become what’s possibly the most fragrant “nest” we’ve ever smelled.

[caption id="attachment_35867" align="aligncenter" width="1080"]jypsy Image Credit: @pscafe[/caption]

If that doesn’t look appetising to you, I don’t know what does.

Jypsy’s menu is extensive, with many sharing plates available if you’re in a large group.

Check out their full menu here.

Jypsy is casual yet elegantly refined and the food is great! So if you’re planning a dinner date, this is it.

This Authentic Mexican Joint In Tanjong Pagar Serves Tacos From $8 – And It’s Vegetarian-Friendly Too

lucha loco

One of the most enjoyable foods to eat, has got to be the taco.

It’s so simple yet so good, which probably explains why it’s considered to be one of the best foods to eat when drunk.

Is this why they serve alcohol with tacos?

In Singapore, there’s an increasing number of Mexican restaurants and a crowd favourite is Lucha Loco.

Going Loco For Tacos

Located on 15 Duxton Hill, Lucha Loco is a casual Mexican cocina (kitchen) and bar, serving up great Mexican food and tequilas (of course).

[caption id="attachment_35834" align="aligncenter" width="2048"]lucha loco Image Credit: Lucha Loco[/caption]

It first opened in 2012 and today, it is known as one of the few places in Singapore for great Mexican fare.

The coolest part of this restaurant has got to be the outdoor garden seating.

[caption id="attachment_35829" align="aligncenter" width="960"]lucha loco Image Credit: Lucha Loco[/caption]

Now, for the food.

They serve up tacos and quesadillas, as well as a wide variety of other authentic Mexican snacks and sides.

Some of the favourites are the Baja Fish Tacos ($10), the vegetarian Corn & Artichoke Tacos ($8), and the Cangrejo Tacos ($16), which uses buttermilk fried soft-shell crab.
